Baked Brussels Sprouts Au Gratin

Picking the sprout quest back up. Excellent side dish although of the cheesy sides I still prefer cheesy leeks. That said as AT loves sprouts and I must make them, this is a good way.



Ingredients


  • 500g Brussels sprouts halved lengthwise

  • 1 tbsp olive oil

  • Salt and black pepper to taste

  • 2/3 cup double cream

  • 1/4 tsp onion powder

  • 1 1/3 cups cheddar grated, divided

  • 1/4 cup parmesan grated

 

Method


  1. Preheat the oven to 180C.

  2. Coat a baking dish with cooking spray.

  3. Toss the sprouts, olive oil, salt and black pepper in a bowl.

  4. Cook the sprouts over a medium heat until they are tender-crisp and slightly browned, about 5-6 mins.

  5. Transfer the sprouts to the baking dish.

  6. In the same skillet add the double cream, onion powder, salt, black pepper and bring to a boil.

  7. Reduce the heat to medium and simmer the until it thickens slightly, about 2 mins.

  8. Take the pan off the heat and whisk in 1 cup of the cheddar cheese and the parmesan cheese.

  9. Evenly top the sprouts mixture with the cheese sauce.

  10. Top the cheese sauce with the remaining cheddar cheese.

  11. Bake the sprout mixture until it is browned and bubbly, about 20-25 mins
