Beef Stroganoff

Lovely simple weeknight dinner. Works with pasta or rice.

Ingredients
500g steak strips
2 tbsp vegetable oil, divided
1 large onion, sliced
300g mushrooms, sliced
3 tbsp butter
2 tbsp flour
500 ml beef stock
1 tbsp Dijon mustard
150ml sour cream or cream
Salt and pepper
Chopped chives, for garnish (optional)
Instructions
Slice the steak into 3cm strips, discarding excess fat.
Sprinkle with a pinch of salt and pepper.
Heat 1 tbsp oil in a large skillet over high heat, scatter the beef in the skillet and leave untouched for 30 seconds until browned.
Turn beef quickly, leave untouched for 30 secs to brown.
Remove and set aside, don't worry about pink bits.
Turn heat down to medium high and add the butter.
Add the onions, cook for 1 min, then add the mushrooms and cook until golden.
Add the flour and cook, stirring, for 1 min.
Gradually add the stock whilst stirring.
Add sour cream and mustard and stir until incorporated.
Bring to simmer, then reduce heat and cook until slightly thickened (3 - 5 mins).
Add the beef back in (including plate juices) and simmer for 1 min.
Serve over pasta or rice, sprinkled with chives.
