Chocolate Orange Crème Brulee

I don't really make dessert but if I did have people round this is my go to. I think it's the blow torch that appeals. You can make without the orange and they're still delightful.

Ingredients
- 500 ml double cream 
- 100g caster sugar 
- Vanilla Pod 
- Orange essence (optional) 
- 6 egg yolks 
- Sugar for serving (I prefer brown but any will do) 
- Chocolate orange segments for serving (optional) 
Method
- Pour cream into pan and scrape vanilla pod in. Add stalk. 
- Add a few drops of orange flavouring (optional) 
- Bring to boil, simmer for 5 mins 
- Beat the sugar and egg yolks until fluffy 
- Bring the cream back to boil and pour over the eggs. 
- Whisk until thickened 
- Pour into ramekins 
- Place in bain-marie 
- Cook for 40-45 minutes until set but wobbly 
- Chill 
- For serving, sprinkle with an even layer of sugar and caramelise with a blow torch. Alternatively caramelise under grill. 
- If adding chocolate orange segments do this after caramelising.
