Creamy Chicken Gnocchi

Creamy and delicious. A nice change from the primarily tomato based gnocchi recipes.

Ingredients
1 tbsp olive oil
2 tbsp butter
350g chicken, diced
4 garlic cloves, minced
75ml dry white wine
1 tsp Italian seasoning
400ml chicken stock
180g cream cheese
500g gnocchi
100g baby spinach, roughly shredded
1/4 cup grated Parmesan
Black pepper
Method
Heat the olive oil and butter in a large, deep pan.
Add the chicken and cook for 4-5 mins until golden.
Stir in the garlic and continue to cook for another minute.
Add the white wine and cook for 1-2 mins until the alcohol mostly evaporates.
Stir in the Italian seasoning and stock and bring to a simmer for about 10 mins.
Stir in the cream cheese, breaking it down with your spoon and stirring continuously until smooth.
Add the gnocchi and baby spinach, cover the pan with a lid and cook for 3-5 mins.
Turn off the heat, stir in the grated Parmesan and season with salt and pepper to taste.
