Creamy nduja pasta

A lovely midly spicy pasta (you can make it more so if you like a kick) which is super easy to make. The original recipe didn't use chicken so that's optional but I recommend.

Ingredients


  • 190g dried pasta

  • 3 chicken thighs, chopped

  • 70 g butter

  • 1 tbsp nduja paste (2 if you like more kick)

  • ¾ cup cream

  • 60 g parmesan finely grated

  • 1 tbsp lemon juice

  • 1 ½ tsp sugar

  • 1 cup flat leaf parsley chopped, or 1 tbsp dried

  • Salt and pepper

 

Instructions


  1. Cook your pasta until al dente.

  2. Season your chicken and place in the air fryer at 180C for 15 mins.

  3. Melt the butter over medium heat

  4. Add the nduja and whisk into the butter.

  5. Add the cream and whisk well to combine, allowing a gentle simmer, don’t boil.

  6. Add the lemon juice and sugar and stir to combine

  7. Add the parmesan, whisking to melt into the sauce.

  8. Add your cooked pasta into the sauce and gently stir. 

  9. Add the parsley and stir.

  10. Simmer for a minute or two to thicken.

  11. Serve with extra parmesan and black pepper.
