Fajita chicken fried rice

We piled this into wraps like an almost-burrito!




Ingredients

 

  • 170g basmati rice

  • 3 chcken thighs, cut into chunks

  • 1 tbsp olive oil

  • 1 large onion, roughly chopped

  • 1.5 peppers, deseeded and roughly chopped

  • 1 tsp sweet smoked paprika

  • ¾ tsp ground cumin

  • ½ tsp groundcoriander

  • ½ tsp dried oregano

  • 1 lime, juice only

  • Small handful fresh coriander, chopped

  • Salt salt and freshly ground blakc pepper

 

Method

 

  1. Cook the until just tender. Drain well and set aside to cool.

  2. Season the chicken well with salt and pepper.

  3. Heat the oil in a large pan fry the chicken until browned and cooked through then set aside.

  4. Add the onion and peppers to the pan, season with salt and cook until just tender.

  5. Mix in the spices and oregano and fry for 1 min.

  6. Add the rice, return the chicken to the pan and stir-fry until heated through.

  7. Stir through the lime juice and fresh coriander.
