Honey Dijon Brussels Sprouts with Capers

Alix loves sprouts, I need them to be better. In anticipation of Christmas Dinner we're practicing different enhancements. This one was really nice although I'm concerned the parents will find them too sweet.

Ingredients

  

  • 250g brussels sprouts

  • 2 tbsp olive oil

  • 3 tbsp Dijon mustard

  • 2 tbsp honey

  • Salt and pepper

  • 2 tbsp capers

 

Instructions

 

  1. Preheat oven to 220°C.

  2. Coat a baking sheet with oil or line with baking paper.

  3. Whisk together olive oil, mustard, and honey.

  4. Slice brussels sprouts in half.

  5. Pour half of the mixture over brussels sprouts and toss to coat fully.

  6. Spread brussels sprouts in a single layer, leaving a small corner of the tray empty.

  7. Season with salt and pepper.

  8. Bake for 20 mins.

  9. Place capers in the empty corner of the tray (I put mine in a muffion tin) and bake for an additional 10 mins.

  10. Transfer to a serving bowl, and top with remaining mustard mixture; toss well.

  11. Sprinkle with crispy capers.
