This has a lovely sweet, sticky coating, a bit like the ones you'd do for ribs. We added a bit too much paprika but I think that helped!

Ingredients

  • 1/3 cup mayonnaise

  • 2 tbsp Dijon mustard

  • 2 tbsp honey

  • 1/8 tsp garlic powder

  • 1/4 tsp smoked paprika

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1 tbsp olive oil

  • 4 bone-in pork chops

Method

  1. Preheat the oven to 180C.

  2. Prepare the sauce by stirring together the mayonnaise, Dijon, honey, garlic powder, paprika, salt and black pepper.

  3. Use kitchen roll to dry off the surface of the pork chops, then season each side with  salt and pepper.

  4. Heat the oil in pan over medium-high heat and cook the chops until golden brown on each side (3 min each side).

  5. If your pan isn’t oven proof place the chops in a casserole dish.

  6. Smear the sauce over both sides of the pork chops and bake for about 20-30 mins depending on thickness until the internal temperature reaches 62C.
