Thai Turmeric Chicken

A quick and easy marinade for chicken you can just stick in the oven.

Ingredients

 

  • Bone in chicken – e.g. 6 large skin on thighs or 10 drumsticks

 

Marinade

  • 4 garlic cloves , finely minced

  • 2 tbsp fish sauce

  • 2 1/2 tbsp oyster sauce

  • 1 tsp black pepper

  • 1 tbsp ground turmeric

  • 1/4 cup brown sugar (tightly packed cup)

 

Instructions


  1. Mix Marinade ingredients in a large bowl, add the chicken and toss to coat.

  2. Marinade for at least 3 hours, preferably overnight.

  3. Preheat oven to 160°C fan.

  4. Place chicken on a tray, skin side up.

  5. Scrape all Marinade out of the bowl and dab onto chicken.

  6. Bake for 40 mins, basting at the 30 min mark.

  7. Increase the oven temperature to 180°C fan and bake for a final 10 mins to caramelise the skin.

  8. Rest for 3 mins before serving.
