Thai Turmeric Chicken

A quick and easy marinade for chicken you can just stick in the oven.

Ingredients
Bone in chicken – e.g. 6 large skin on thighs or 10 drumsticks
Marinade
4 garlic cloves , finely minced
2 tbsp fish sauce
2 1/2 tbsp oyster sauce
1 tsp black pepper
1 tbsp ground turmeric
1/4 cup brown sugar (tightly packed cup)
Instructions
Mix Marinade ingredients in a large bowl, add the chicken and toss to coat.
Marinade for at least 3 hours, preferably overnight.
Preheat oven to 160°C fan.
Place chicken on a tray, skin side up.
Scrape all Marinade out of the bowl and dab onto chicken.
Bake for 40 mins, basting at the 30 min mark.
Increase the oven temperature to 180°C fan and bake for a final 10 mins to caramelise the skin.
Rest for 3 mins before serving.
