Toad in the Hole with Leftover Roast

A nice way to use up leftovers. I will take a much better picture next time I make this as I opened the oven door by accident so it was slightly flat. We hadn't had roasties so I made some to go with.



Ingredients

 

  • ½ cup leftover roast meat

  • ½ cup leftover roast potatoes

  • ½ cup cooked vegetables (carrots, sprouts, peas..whatever you have left)

  • 150g plain flour

  • 185ml milk

  • 2 eggs

  • ¼ tsp salt

  • ⅛ tsp black pepper

  • 1 tbsp vegetable oil

 

Method

 

  1. Preheat the oven to 220C.

  2. Drizzle the oil in a square roasting tray.

  3. Pop the tray in the oven for 5 mins until the oil is smoking hot.

  4. Cut the meat and vegetables into small cubes.

  5. In a large bowl, sift the flour, make a well in the middle, and crack the eggs in.

  6. Use a fork to mix them well.

  7. Slowly pour the milk in, whisking well to get a smooth batter.

  8. Season the batter with salt and pepper.

  9. Carefully remove the tray from the oven, and spread the meat and vegetables in a single layer.

  10. Pour over the batter, and return the tray to the oven for 20-25 mins until golden and nicely risen.
