Toad in the Hole with Leftover Roast

A nice way to use up leftovers. I will take a much better picture next time I make this as I opened the oven door by accident so it was slightly flat. We hadn't had roasties so I made some to go with.

Ingredients
½ cup leftover roast meat
½ cup leftover roast potatoes
½ cup cooked vegetables (carrots, sprouts, peas..whatever you have left)
150g plain flour
185ml milk
2 eggs
¼ tsp salt
⅛ tsp black pepper
1 tbsp vegetable oil
Method
Preheat the oven to 220C.
Drizzle the oil in a square roasting tray.
Pop the tray in the oven for 5 mins until the oil is smoking hot.
Cut the meat and vegetables into small cubes.
In a large bowl, sift the flour, make a well in the middle, and crack the eggs in.
Use a fork to mix them well.
Slowly pour the milk in, whisking well to get a smooth batter.
Season the batter with salt and pepper.
Carefully remove the tray from the oven, and spread the meat and vegetables in a single layer.
Pour over the batter, and return the tray to the oven for 20-25 mins until golden and nicely risen.
