Aloha Rice

Something a bit different. Since I recently changed my mind and embraced pineapple on pizza this recipe appealed. It's kind of sweet, the soy is prominent. I served with chicken wings because who doesn't like double chicken? Will definitely make again.



Ingredients


  • 1/2 cup brown sugar

  • 1/2 cup soy sauce

  • 1 tsp garlic, minced

  • 3/4 cup chicken stock

  • 1 1/2 cups white rice, uncooked

  • 1/2 cup red onion, diced

  • 1 red pepper, chopped

  • 1 can pineapple in juice, chopped, juices reserved

  • 450g chicken thighs diced into bite-sized pieces

  • Coriander, chopped, for garnish (optional)

  • Bacon, cooked and diced, for garnish (optional)

 

Method


  1. Preheat the oven to 200C.

  2. Spray a casserole dish with oil.

  3. Whisk together the brown sugar, soy sauce, garlic and chicken stock.

  4. Add the uncooked rice, onion, pepper, pineapple (including the juices) and the chicken.

  5. Pour the mixture into the prepared baking dish and cover tightly with foil.

  6. Bake for 50 mins.

  7. Uncover the dish and stir the mixture.

  8. Bake until the chicken is cooked through at 74C internally and the rice is tender, for about 10 mins.

  9. Serve topped with coriander and bacon.
