Creamy Mozzarella Garlic Butter Chicken Pasta

Yes another creamy pasta! I can't help it. It's much more flavoursome than the picture looks becuse the original recipe said 350g of pasta and it swallowed the sauce. You only need 250g really.

Ingredients
250g short pasta
For the Garlic Butter Chicken:
600g chicken, cut into bite-sized pieces
1 tbsp olive oil
2 tbsp butter
1/2 tsp salt
1/4 tsp black pepper
1 tsp garlic powder
1 tsp Italian seasoning
For the Creamy Mozzarella Sauce:
1 tbsp olive oil
1 tbsp butter
1/2 medium red onion, finely chopped
3 cloves garlic, minced
1 chicken stock cube (in 120 ml water)
80g grated mozzarella cheese
30g grated parmesan cheese
250ml double cream
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
Method
Cook the pasta until al dente, reserve 120ml pasta water, then drain.
Season the chicken with the seasoning ingredients.
Heat the olive oil and butter in a pan and cook the chicken for 5 mins until golden on the outside.
Add the onion and saute until soft.
Add garlic and cook for 1 min.
Add the stock, cream and seasoning and simmer for 5-10 mins until the chicken is cooked through.
Stir in the cheeses and cook until melted.
