Raita

I am a spice wuss so if I'm making anything with a kick I like a cooling side. This receipe has a nice depth of flavour with the spices as well as the herbs.



 

Ingredients

 

  • 3/4 cup plain yogurt 

  • 1/2 cup cucumber, finely diced or grated

  • 1 tbsp finely chopped red onion (optional, sub chives or green onion)

  • 2 tsp lemon or lime juice, more to taste

  • 1 tbsp olive oil

  • 1/2 tsp ground cumin

  • 1/2 tsp coriander

  • 2-3 tbsp fresh mint leaves, chopped

  • 2-3 tbsp fresh coriander, chopped

  • 1/4 tsp salt, more to taste

  • 1/4 tsp pepper

 

Instructions

 

  1. Place all ingredients in a bowl and stir.

  2. Garnish with fresh herbs.

  3. Refrigerate until ready to serve.

  4. Raita will keep 4-5 days in the fridge.
