I am a spice wuss so if I'm making anything with a kick I like a cooling side. This receipe has a nice depth of flavour with the spices as well as the herbs.

Ingredients
3/4 cup plain yogurt
1/2 cup cucumber, finely diced or grated
1 tbsp finely chopped red onion (optional, sub chives or green onion)
2 tsp lemon or lime juice, more to taste
1 tbsp olive oil
1/2 tsp ground cumin
1/2 tsp coriander
2-3 tbsp fresh mint leaves, chopped
2-3 tbsp fresh coriander, chopped
1/4 tsp salt, more to taste
1/4 tsp pepper
Instructions
Place all ingredients in a bowl and stir.
Garnish with fresh herbs.
Refrigerate until ready to serve.
Raita will keep 4-5 days in the fridge.
